Recipes Are Instructions, Not Descriptions
Cooking video sits in a category where the viewer intends to reproduce what they are watching. That intention is what makes localization more demanding than the content's casual tone suggests.
A translated travel video that loses a detail is slightly less informative. A translated recipe that loses a detail produces a failed dish, and the viewer knows exactly who to blame.
Three things have to survive translation for a recipe to work: the quantities must be usable in the viewer's measuring system, the ingredients must be obtainable in the viewer's market, and the techniques must be described in terms the viewer's culinary vocabulary contains.
Language accuracy alone delivers none of these.
Measurement Conversion
Measurement is the most immediate barrier and the one with the most traps.
Volume versus weight. Some culinary traditions measure by volume — cups, spoons — and others by weight. Converting between them is not a fixed arithmetic operation, because the conversion depends on the ingredient's density and on how it is packed. A cup of flour varies substantially by how it was filled, which is why weight-based recipes are more reliable and why converting a volume recipe to weight requires ingredient-specific values rather than a single factor.
Where precision matters — baking especially — provide weights. Where it does not, volume conversions are acceptable.
Temperature. Convert oven temperatures, and be aware that many ovens are marked in conventional increments rather than continuous values. A converted temperature should be rounded to a setting the viewer can actually select. Gas mark systems used in some markets need conversion rather than translation.
Fan and conventional oven settings differ by a meaningful margin, and recipes frequently specify one without saying which. Where the source is ambiguous, the localized version should clarify rather than propagate the ambiguity.
Spoon measures are not identical across markets. Tablespoon volumes differ between several culinary traditions, and a recipe converted on the assumption that they are equivalent will be wrong in quantity-sensitive applications.
Egg sizes vary by market grading system, which matters in baking where eggs contribute significant liquid volume.
Pan and tin sizes are specified in different units and different standard sizes by market, and a recipe assuming a standard size that does not exist in the target market needs a stated dimension rather than a size name.
Round conversions sensibly. A recipe calling for an oddly precise converted quantity reads as machine-processed and is harder to follow than a sensibly rounded equivalent.
Ingredient Availability
The hardest problem in recipe localization is that ingredients differ by market, and no amount of translation quality fixes an ingredient the viewer cannot buy.
Several distinct situations arise:
The ingredient exists under a different name. This is the straightforward case and is a terminology problem. Many produce items, cuts of meat, and dairy products have market-specific names, and the same name sometimes denotes different things in different markets.
The ingredient exists in a different form. Standard packaging, fat percentages, grind sizes, and processing conventions differ. Cream sold at one fat content in one market may be sold at another elsewhere, which changes how a recipe behaves.
The ingredient is available but uncommon. It can be found in specialist shops but is not a staple. The recipe should acknowledge this and offer an alternative.
The ingredient is not available. A substitution is required, and it needs to be a substitution that actually works — which requires culinary judgment rather than a dictionary.
Meat cuts are the most systematically difficult category. Butchery conventions differ fundamentally between markets, and cuts do not map one to one. A cut named in one tradition may have no equivalent in another, and identifying the closest usable alternative requires knowledge of both butchery traditions.
Flour is another recurring difficulty. Flour classification systems differ by market, using protein content, ash content, or grind descriptors, and the same descriptive name can denote materially different products.
Substitutions should be provided by someone who cooks in the target market, not derived by translation. Where a substitution changes the result, saying so is better than silently substituting.
Technique Terminology
Culinary technique vocabulary is specific and varies in how it maps across traditions.
Some techniques have direct equivalents. Others exist in one culinary tradition and not another, in which case describing the action is better than borrowing a term the audience will not know.
Some technique terms are used internationally in their original language, particularly French terminology in professional and Western cooking contexts, and translating these into the target language reads as odd to anyone with culinary training.
Doneness descriptions are notoriously imprecise and market-specific. Descriptions of how cooked something should be — for meat especially — use market-specific vocabulary and correspond to different expectations. Where precision matters, temperature is more reliable than a doneness word.
Sensory cues — how something should look, sound, or smell at a stage — translate reasonably well and are frequently more useful than time-based instructions, since equipment varies. Preserving these carefully is worth the effort.
Timing and Pacing
Cooking video has a specific timing characteristic: the viewer is frequently cooking along, with their hands occupied and their attention split.
This means audio is the primary channel, as in fitness content, and instruction needs to arrive before the action rather than during it.
Translated narration that runs long pushes instructions past the visual demonstration, which is disorienting when the viewer is trying to match what they are doing to what they are watching.
Where a step's narration expands beyond its visual segment, the options are to condense the narration, extend the segment if the edit allows, or accept the drift where the step is simple enough to tolerate it.
Ingredient lists and quantities read aloud need particular care, since a viewer may be writing them down or measuring as they listen. Delivery here should be measured rather than rapid, and quantities should be stated clearly with the unit.
Cultural Framing
Recipes carry cultural context, and how much to adapt is a judgment call.
Dish names may be kept in their original language with a description, or translated. Keeping the original is usually right for dishes with cultural specificity, since the name is part of what the viewer is seeking.
Meal context differs. When a dish is eaten, what it is served with, and what occasion it belongs to vary by market, and framing that assumes the source market's meal structure may not translate.
Portion conventions differ, both in serving size and in how many a recipe is described as serving.
Dietary considerations vary by market in prevalence and in what is assumed. Ingredients that are unremarkable in one market may be restricted, avoided, or unavailable to a substantial portion of another market's audience for religious or dietary reasons, and acknowledging alternatives extends reach.
Equipment assumptions matter. Kitchen equipment that is standard in one market may be uncommon in another, and a recipe requiring specific equipment should note alternatives.
Adapting too heavily is also a failure mode. A viewer seeking a specific cuisine wants that cuisine, not a version domesticated into their own. The adaptation should address accessibility — units, availability, equipment — while preserving what makes the dish what it is.
On-Screen Text
Cooking video carries dense on-screen text: ingredient lists, quantities, step numbers, timers, and temperature callouts.
All quantities and temperatures in on-screen text need converting alongside the narration, and this is a common omission — narration converted, overlays left in source units.
Ingredient list overlays frequently have tight layouts that break with expanded text, and ingredient names are often longer in translation.
Where the video is accompanied by a written recipe, that recipe needs localizing with the same conversions and substitutions, and it must be consistent with the video. A viewer following a written recipe that disagrees with the video they are watching has a worse experience than having only one of them.
Voice and Register
Cooking content register varies from instructional to conversational to entertainment, and the translation should match the source's position rather than defaulting to instructional.
Personality-driven cooking content depends on the presenter, and voice cloning preserves that presence across languages, which matters in a category where audiences follow specific cooks.
Pacing should allow the viewer to follow while their hands are busy. Cooking narration delivered rapidly is harder to follow than the same content delivered with pauses at step boundaries.
Pronunciation of ingredient names, dish names, and technique terms should be verified. Culinary vocabulary borrowed from other languages is frequently mispronounced by generated voices, and a mispronounced dish name in a cooking video is conspicuous.
Search and Discovery
Recipe content is heavily search-driven, and discovery in a target market depends on matching how that market searches for food.
Dish names are the primary query, and viewers search using the name their market uses — which may be the original-language name, a translated name, or a locally established variant that is neither. Research this rather than assuming.
Ingredient-led searches are common, particularly queries built around using up a specific ingredient. These use everyday ingredient names in the target language, not formal or culinary-register terms.
Dietary and constraint qualifiers vary in phrasing and in prevalence by market, and the terms that carry search volume differ.
Seasonal and occasion searches follow local calendars. Holiday cooking queries peak at different times by market and reference different occasions entirely, which affects both what to publish and when.
Include the converted measurements in written recipe metadata, since some search behaviour is quantity-specific.
Where a dish is strongly associated with a cuisine, including the cuisine name in metadata helps, as viewers frequently search by cuisine rather than by dish.
A Working Sequence
Convert all measurements, temperatures, and pan sizes to target-market conventions, using ingredient-specific values where converting between volume and weight.
Have a cook who works in the target market review ingredient availability and provide substitutions, noting where a substitution changes the result.
Build terminology with attention to technique vocabulary, doneness descriptions, and which terms are conventionally left in their original language.
Translate with timing awareness, keeping instruction ahead of demonstration.
Convert on-screen text alongside narration, and check overlay layouts after expansion.
Localize any accompanying written recipe consistently with the video.
Verify pronunciation of ingredient and dish names.
Batch Considerations
Recipe libraries localize efficiently because they are highly repetitive, and structuring the work accordingly saves considerable effort.
Ingredient names, technique terms, and equipment vocabulary recur across an entire catalog. Once the glossary is built and validated for one set of recipes, it applies to all of them, and the marginal cost per additional recipe falls sharply.
Conversion rules are similarly reusable. Establishing the volume-to-weight values for common ingredients once, with the source and target conventions fixed, removes a per-recipe decision.
Substitution decisions accumulate into a reference that serves the whole catalog. A market-specific substitution list — what replaces what, and what changes as a result — is built once and consulted repeatedly.
Group recipes by cuisine or by ingredient family when batching. Recipes sharing ingredients and techniques review faster together than the same recipes reviewed in arbitrary order, because the reviewer holds the relevant context.
Series content — a multi-part technique course, a themed collection — should be localized as a unit with frozen terminology, since inconsistency across a series is more noticeable than imperfection within one recipe.
Read the comments. Cooking audiences report problems directly and specifically — an ingredient they could not find, a quantity that seemed wrong, a temperature that burned the dish. This feedback is more diagnostic than any internal review, because it comes from people who actually attempted the recipe in the target market's kitchens with that market's ingredients. Programs that route comment feedback back into the substitution reference improve faster than those relying on review alone.
Cooking is a category where the viewer's success is the measure of the localization. A recipe that is translated accurately and cannot be cooked in the viewer's kitchen has failed, and the failure is usually in units, availability, or equipment rather than in language.
